Fourth of July weekend is already over. Can you believe it? I’m trying not to because this weekend was amazing and I’m in denial that I have to jump right back into work. And it’s raining. Days like these are meant to be spent relaxing at home, reading a good book, and enjoying a slow breakfast. Am I right? Speaking of enjoying a slow breakfast, wether you’re jumping right back in or taking some extra time off this week (good for you, you deserve it!), these peanut butter overnight oats are glorious.
This particular recipe is by Dana, of Minimalist Baker, which if you aren’t following you should be. Her recipes are easy, quick, and so so tasty. I’ve made a few of hers, but these simple oats are my favorite. We make them at least 2-3 times per week because I spend my mornings (and I mean mornings – like 5:30 am, yikes!) blogging, catching up on emails, and working on my freelance game, meaning there’s minimal time to make breakfast.
From there I head right to work (yes, still in a good ol’ office setting) until about 5 or 6 pm. Then it’s back to blogging, freelancing, etc. (the good stuff!) If I’m making this tropical green smoothie, I’ll enjoy it before I go to work, but if not I’m grabbing a mini mason jar of these peanut butter overnight oats, which we’ve whipped up the night before in only 5 minutes. Yes! 5 minutes! I’m serious. T. and I make two servings before we go to sleep so that in the morning all we have to do is grab it and go.
Seriously, can it get any easier than that? Even though I wake up super early and don’t leave until 8:30 am, having breakfast ready is amazing. It lets me focus on tackling my daily task list and getting ready for the day ahead. Now, I don’t typically share others’ recipes here because I like to keep it as original as possible, but these super easy peanut butter overnight oats are a must. I just had to share them with you!

Dana’s recipe calls for unsweetened plain almond milk, but we’ve been using unsweetened vanilla milk and love it just as much. Recently though, we’ve been adding Nectar and Green’s almond milk to our oats and oh boy, it’s SO good with their sea salt and honey almond milk (to be expected, right?). YUM. I’d highly recommend giving them a try.
While you can add any toppings you like, I’ve loved sticking to Dana’s suggestion of topping the oats with sliced banana and fresh strawberries. I’ve added blueberries as well, which add a little somethin’ somethin’. Actually, I bet any berries would be delicious on here. Switch it up and let me know what you like best!

This sounds so delicious. I love a good breakfast to start off the day. But I have actually never made overnight oats – I need to get on that and give them a try!

I’ve been having overnight oats so much this year. Usually I stick to oats, chia seeds and almond milk, then add walnuts or blueberries then a little honey. If I know I’m out super early and need an extra kick I add some creamy peanut butter. Works so well!
