Alright, it’s possible that this is my favorite cocktail yet. I mean..a pineapple mezcal smash is exactly what I need on
a every Friday. It also sounds way fancier than it actually is.
So, why not invite some friends over, whip up a few of these easy peasy mezcal smashes, and impress everyone. Not that you have to impress anyone, you’re totally awesome the way you are. (Who doesn’t need a little Friday pep talk?)
Back to the cocktail, it might be the middle of winter – and when I say middle of winter I’m serious because it looks like we’re headed into the negatives up here in Boston this weekend – but this smash is perfect for year-round enjoyment.
Fresh mint always adds something, you know? It’s refreshing in summer, but I love it in the winter because it smells so darn fresh. It’s like a scrumptious little escape from the cold…if you live where it gets cold, that is.
It’s been a hectic week, so I’m looking forward to powering through an awesome Friday and then being home for a full weekend! It’s a miracle! Although, I can’t complain. We were in Chicago two weeks ago (which was amazing) and then Kennebunkport, ME (which was the most relaxing getaway ever). Never heard of Kennebunkport? You’re not alone. Make Your Own Pineapple Mezcal Smash
So, with my full weekend at home I’m looking forward to more cocktail-making, relaxing, reading, and finally catching up on my favorite blogs! What do you have in store for this weekend? ps. get the recipe for the cocktail below!
- 1.5 oz. mezcal
- 2 oz. crushed pineapple (a can is fine!)
- .5 oz. simple syrup
- 1 oz. Pineapple juice
- One bunch of fresh mint
- Muddle simple syrup, a little mint, and crushed pineapple as desired in the bottom of your glass
- Add mezcal and 1/4 c. crushed ice, stir
- Add pineapple juice and stir again
- Top off with crushed ice
- Garnish with mint
