Let’s do something a little different this week in honor of National Pumpkin Day. Rather than sharing my typical Friday cocktail, I’m bumping it up to today with a tasty 3-ingredient Spiked Pumpkin Spice Apple Cider (yay for mid-week surprises!).
Why, you ask? Because I love fall, and fall means pumpkins, even though I don’t actually love (or necessarily even like) pumpkin-flavored foods.
Gasp! I know! I am no fan of the Pumpkin Spice Latte, though I’m not judging you for enjoying your daily or weekly PSL. Rather, I’m going to join in on the fun despite my dislike for all things pumpkin. And you know what? I actually really did enjoy this tasty fall-inspired cocktail! I think I may have even surprised myself with that one. And then I may have surprised myself again when I went in for seconds. And then I really surprised myself….just kidding, I didn’t go for thirds, but it was so darn perfect for a chilly fall evening that I totally could have. Well, there’s always tomorrow, right? 😉
Remember just last week when I reminded you all how much I love 3-ingredient cocktails? Well, here’s another one for you – it’s got honey notes, spiced pumpkin rum, and of course, the hero of fall – fresh apple cider. Are you ready to whip up your own Spiked Pumpkin Spice Apple Cider? Go for it! All it takes is a quick stir.
Ingredients:
2 ounces Captain Morgan Jack-O’Blast Spiced Rum
1 ounce Drambuie
Fresh apple cider
Sugar (for garnish)
Directions:
1. Coat rim of glasses in sugar (I used ginger sugar)
2. Mix all liquid ingredients in a glass
3. Add ice
Makes 2 cocktails
