7 ways to use chimichurri sauce. Why? Because it’s delicious.
I love a good chimichurri sauce.
It’s versatile and honestly, you can make it so many different ways.
When I make chimichurri at home, I never actually measure anything out. I just grab bunches of cilantro and parsley, some spices and mix them all up. I’ve made it with lots of spices, few spices, and even a handful of cashews.
I’m not kidding! Chimichurri is whatever you want it to be. Sure, that means that perhaps you aren’t making chimichurri per se, but that’s okay! I think we can all agree that it’s a delicious green sauce nonetheless.
Though it should probably, at the very least, contain parsley.
Historically speaking, chimichurri is primarily used on grilled meat. But, it’s such a delicious sauce, why reserve it just for grilled meats? Especially if you’re a vegetarian, pescatarian, or vegan (or if you simply don’t eat meat)?
So I say, let’s get creative. Here are 7 fun ways to use more chimichurri sauce in your life.
Roasted sweet potatoes: If you haven’t tried it yet, chimichurri sauce and roasted sweet potatoes is a match made in heaven. In fact, we had roasted sweet potatoes with chimichurri sauce just this week! We also topped them off with avocado and black beans tossed with cumin, garlic, and sea salt.
Veggie tacos: Oh my gosh if you thought roasted sweet potatoes with chimichurri sounded good, wait till you hear about these tacos. We made roasted veggie tacos a while back with crispy brussels sprouts, avocado spread, and blackened corn. They were to die for.
Grilled steak skewers: Going back to its roots, chimichurri is divine on grilled meats – especially grilled steak skewers. Get a thin cut steak for these and pile them up on your grill. I suggest marinating the meat in chimichurri prior to grilling, and then topping your skewers with additional chimichurri once they’re done.
Eggy breakfast: That’s right, chimichurri for breakfast. It’s especially tasty on fried eggs served over greens, avocado, and queso fresco.
French fries: I definitely have a salty tooth (is that a thing?) more than a sweet tooth, so fries are pretty much always on my mind. Try dressing up your next back of french fries with chimichurri, chorizo crumbles, and….of course….cheese.
Grain bowls: I love a good grain bowl. I particularly love a good grain bowl when it’s topped with some sort of sauce. Even more so when that sauce is chimichurri. Grab your favorite roasted veggies, some grains, and slather on the sauce.
Salad dressing: I’ve been known to, on occasion, swap out salad dressing for chimichurri. It’s a sauce and it’s delicious. So why not throw it on top of your salad? Exactly.
