A smoky Aperol cocktail with mezcal and honey
This Aperol cocktail is a favorite. Here’s why:
- Because it’s easy
- Because it’s complex with few ingredients
It’s also perfect for the end of summer/start of fall. It’s light and bright with the lime juice and honey, and a little smoky from the mezcal just in time for the weather to start cooling down (PLEASE happen sooner in Atlanta! 🤞).
It’s a take on my all-time favorite cocktail, the Naked and Famous, so I knew it’d be an instant winner around here.
The original Naked and Famous cocktail includes equal parts:
- Mezcal
- Yellow chartreuse
- Aperol
- Fresh lime juice
This one is quite similar, but we swap out a honey simple syrup for the yellow chartreuse (which is delicious if you’re able to pick up a bottle), making it a little more approachable if you don’t yet have the ingredients. It’ll also save you some money, so win-win.
Aperol Cocktail with Mezcal and Honey Simple
3/4 oz mezcal
3/4 oz Aperol
3/4 oz fresh lime juice
3/4 oz honey simple (recipe included below)
1. Pour all ingredients into a shaker
2. Add ice and shake vigorously for about 30 seconds. The tin portion of your shaker should be nice and cold.
3. Strain into a chilled coupe glass.
4. Optional garnish: Fresh herbs!
If you don’t have honey simple on hand, it’s SO easy. Scout’s honor. Grab a jar and add equal parts honey and hot water. Shake until the honey is incorporated into the water so it resembles a simple syrup and is easy to pour. I love honey, but honey chunks (what a terrible word!) is not ideal in a cocktail.
