When I say this is an easy broiled grapefruit, I mean it. Despite my recent Any Excuse to Party post, the one with the Grapefruit JalapeƱo Popsicles, I didn’t always love grapefruit. I actually despised it. If grapefruit was the only fruit around, I’d rather toss it then eat it. Now, my tastes have certainly changed. Enjoying a halved grapefruit on its own is one of my absolute favorite snacks. I even bring them to work with me – pro tip: get a grapefruit spoon if you don’t have one already. So. Worth. It.
I’ve been trying to find sweet alternatives to super sugary snacks. Despite the container of ice cream in our freezer right now, I think we’ve done a pretty good job! We gave banana ‘n’ice cream’ a shot and it was pretty tasty! For that one all you have to do is slice up as many bananas as you’d like, freeze them, then blend them! It’s a weird consistency when you start to blend them (chalky, almost), but if you stick with it, you end up with a nearly identical texture to ice cream. We topped ours off with some agave and a few mini chocolate chips. So much yum!
But back to my love for grapefruit. I started making this super easy broiled grapefruit a year or two ago, and realized when I told my friends about it, they looked at me like I was a freak of nature. I usually got “HOT? Like hot grapefruit? Almost burned? How do you eat it like that?” Well, let me tell you – it’s pretty darn delicious.
All you need is a grapefruit, a little brown sugar, and about 5 minutes in the broiler – oh, and a sprig of fresh mint (if you’d like). It’s honestly the easiest snack and definitely satisfies those dangerous cravings for sweets I get all too often. I think healthy snacking is the easiest in summer. There are so many fruits in season and I find myself often craving those naturally sweet, juicy flavors. But what about winter? In winter I find myself craving mac ‘n cheese more than anything – oops. What are your favorite healthy snacks that you can enjoy year-round?
