A delicious + easy to prep ahead egg toast recipe.
Why is toast so good? I want to eat MOST of my meals on toast.
Well, with the exception of things like pasta. And maybe cereal. But you catch my drift.
MANY things taste delicious on toast. Like eggs. Poached eggs, in particular. And hummus.
HUMMUS?!
Yes, hummus. Just trust me. It’s delightful. Truly delightful. Especially when it’s a creamy, fluffy hummus by Cookie + Kate that I swear by. It’s a dreamy whipped hummus that makes snacking on hummus even better than it already was.
And it’s good on toast. Scratch that. It’s DELICIOUS on toast. And, for this little breakfast meal, it pairs perfectly with a poached egg, fresh dill, homemade garlic aioli (it’s kind of a faux aioli because who wants to hand whip eggs for 10+ minutes before 10 am? Not this girl, not one bit.
So instead of a true “homemade” aioli, this one’s garlic mayo. Boom. Done. Delicious.
This egg breakfast toast is unbelievably easy and delicious. And, if you prep your garlic aioli and hummus in advance, all in all, it should take you about 10 minutes to whip up in the morning. See why meal prep is so helpful? (*I’m using this as a reminder for myself. Meal prep is a HUGE help, but I’ve been terrible at it lately, ugh.)
For the hummus

For the aioli
2 T mayo
1/2 clove garlic, minced
1/2 t fresh lemon juice
For the toast
1 slice of bread
1 egg
Fresh dill
Sea salt + cracked pepper
1. Prep your hummus in advance using this recipe.
2. Make your poached egg by bringing a skillet filled with about 2 inches of water to a simmer. Drop your egg in the middle and cover. Turn heat off and let sit in simmering water for 4 minutes. Remove with a slotted spoon and let dry on a paper towel.
3. Make your aioli by mixing your mayo, garlic, and lemon juice together in a small bowl until combined. If you’d like to switch up the lemon, try a white vinegar instead.
4. Toast your bread and once golden brown, spread your hummus on top. Top with your egg, garlic aioli, and fresh dill. Season with sea salt and cracked black pepper, to taste.
