I love mornings.
I know that’s a bold statement. One that’s not frequently received with agreeable nods.
Instead, I typically hear audible gasps and a chorus of “oh no…why?” And, you know what? I don’t blame them. I wasn’t always a morning person. In fact, I remember oversleeping once in high school and ending up arriving late to my job at the local fabric shop by two hours. TWO! I know. I instantly felt terrible, I was riddled with that gut-punch feeling that seems to only subside with time, say, about an 8 hour shift.
I think that may have been the start of my shift in thinking. Or perhaps it was the 8 am statistics class that I had to take in college. I suppose we’ll never know.
Yet, here we are. There’s something so utterly special about mornings. They exist in this ethereal point in time where opportunity seems endless. It’s in the morning that I can really set the tone for the day. Or your intention, if you will.
For me, it’s starting out with exercising and a balanced breakfast. I realize as I write this that that statement sounds like a 90s commercial for cereal, yet it’s not. I promise.
Was anyone else a fan of the fruit-in-the-bottom yogurts? I loved them. I also thought that they were a super healthy way to start the day. However, I realized that many of them were filled with added sugar. While I’ll still enjoy my fair share of added sugar (iced lattes, anyone?), I try to start my day with a more wholesome breakfast – like this one.
I created a few different fresh berry parfait recipes using a handful ingredients. With one, I placed raspberries on the bottom of my jar and added a dash of agave. I used a spoon to crush the raspberries and mix them in with the agave – my own fruit-in-the-bottom solution. I topped it with crumbled belVita Breakfast Biscuits and Oikos Triple Zero Mixed Berry yogurt. Then, I threw some blueberries on top along with some more belVita Breakfast Biscuits (so much yum!) and voilá!
With another version, I placed blueberries in the bottom of my jar with some crushed belVita Breakfast Biscuits, and topped it off with Oikos Triple Zero Vanilla yogurt and a sprinkling of chia seeds.
And, if you’re anything like me, the next step after breakfast prep is coffee. I paired my Fresh Berry Parfait with a glass of homemade cold brew (french press for the win!) with Silk’s Almond Creamer.
