Happy Monday, friends! If you’ve been here for a while, you know that I typically wait until Fridays to share my recipe posts.
That’s usually because it’s a cocktail recipe or a fun weekend breakfast idea. Don’t worry, this is still a fun one! Just a different day.
Today, this Kiwi Chia Pudding felt extremely right for a Monday morning.
It’s one of those colorful healthy breakfasts that can help you kickstart your day.
Sure, I’d always rather be eating a bagel, but that’s besides the point.
Plus, I’ve really cut back from bagels. Insert crying emoji here. Though, it’s been years since I used to eat bagels nearly every day and I can sincerely tell you I feel such a difference. Don’t worry, I surely still enjoy my carbs, but in different forms.
Anyways, back to the point because now all I want is a bagel.
This Kiwi Chia Pudding was adapted from DetoxDIY and felt so perfect for a hot summer Monday morning. Plus, it helps that you can make it the night before. In fact, I’d highly recommend making it the night before so that it has more time to set.
Almond milk is quite thin, but I wanted to use it for this recipe – so I mixed it with plain greek yogurt and let it sit overnight. This will help with the thickening process so that you’re not eating watery chia pudding. Yuck.
This recipe is definitely a summer one. There’s just something about kiwis that feel so innately…well…summery. The bright green color, the juicy sweet flavor (unless you get one that’s too tangy – in which case, add a little more agave!) – they’re so darn tasty.
