The perfect soup topper – can you guess what it is?
I felt so silly writing the name of this post.
The perfect soup topper? Say it three times fast and “topper” doesn’t even sound like a real word anymore.
Though I guess that happens with words like “apple” and well anything else if you say it too much back to back.
Luckily the actual soup topper doesn’t get old like saying “soup topper” a bunch of times does.
Okay I’ll be real honest with you: I do not like pumpkin flavored things.
Yes, it’s true. I am no PSL lover. Give me a sweet potato latte though and I’m happy. Yes! Sweet potato lattes are a thing and they are DIVINE. I had my first (and to be honest – only) sweet potato latte at a cafĂ© in Charleston and I still think about it. I attempted making it once and it was good, but just not the same. Perhaps this winter is the perfect season to re-attempt it. I’ll be sure to share if it works out! AKA if it’s not chunky because…gross.
Anyways back to the soup topper because it’s winter soup season and I’m LOVING it. Soup is just so versatile and easy and keeps well for leftovers for a day or two – like my favorite Thai Khao Soi soup (okay also more on that later).
You can make it a million different ways, but it’s always the same concept: A delicious hot bowl of savory goodness that warms you from the inside out.
Wow maybe I should move my talents over to Campbell’s and start selling soup full-time? I guess I could be giving myself too much credit here.
Also wow, who knew I had so much to say about soup? And this isn’t even a recipe for soup! Jeeze I guess watch out for when I do share a soup recipe. In the meantime, because I’ve kept the suspense going long enough and you’re probably wondering why the heck I mentioned not liking pumpkin, my favorite soup topper is….PEPITAS!
Pepitas, yep. Or pumpkin seeds, if you prefer. I’ve spent quite a bit of time looking into the difference between pepitas and pumpkin seeds and long story short, they’re the same. If you’re as interested in the nuances as I am, The Cookful has an helpful story up about it.
So yes, my absolute favorite soup topper is pepitas. Why? Well, because they’re so versatile! I love them roasted, and you can do that with SO many different seasonings. The latest batch I made is one of my favorites. Here’s how to make them yourself at home in less than 20 minutes.
