A Pineapple Coconut Cooler to help you ease into summer.
It’s Friday and it’s sunny and it’s going to be a great day, y’all!
And no, not just because I’m about to let you in on some fun college memories, but because we’re kicking off another fun-filled weekend, and I’m finally feeling ready for summer. Who’s with me?
I think we even hit 90 degrees in Boston yesterday and oh boy, was it hot.
Okay okay, we’re getting to the college stuff.
Once I finally hit 21 and could legally drink, I quickly found myself obsessed with the sweet liquors and fruity mixers. Don’t we all?
Maybe we don’t, but I sure did.
I sipped on my fair share of dirty shirley’s (a spiked Shirley temple? Of COURSE I loved it!), mai tais, and the crème de la crème – malibu pineapples.
It was my go to in my early years of college no matter where we went. Beer bar? Malibu pineapple, please. Hole in the wall dive? You guessed it.
I slowly transitioned from my sweet and fruity sips to gin and ginger, and kept going from there.
But, that’s not what we’re here to talk about today.
We’re focusing on tasty summer sips – like this Pineapple Coconut Cooler, an ode to one of my college favorites.
If you’re ready for summer sips, then step right up. This one here’s calling your name.
4 parts pineapple juice
1 part falernum
1 part coconut rum
6 sprigs of fresh mint
1. Add mint and falernum to a shaker and muddle for 10 seconds.
2. Add rum, pineapple, and top off with ice. Shake for 15 seconds.
3. Strain into glasses and add crushed ice.
4. Garnish with fresh mint.
A four-step drink? You’ve got it. This one’s easy as pie, and tastes even better.

Well this sounds delicious! I was partial to a malibu and pineapple when I was younger and this sounds like a way better, much less overly sweet version of that
