Alright, it’s possible that this is my favorite cocktail yet. I mean..a pineapple mezcal smash is exactly what I need on a every Friday. It also sounds way fancier than it actually is.
So, why not invite some friends over, whip up a few of these easy peasy mezcal smashes, and impress everyone. Not that you have to impress anyone, you’re totally awesome the way you are. (Who doesn’t need a little Friday pep talk?)
Back to the cocktail, it might be the middle of winter – and when I say middle of winter I’m serious because it looks like we’re headed into the negatives up here in Boston this weekend – but this smash is perfect for year-round enjoyment.
Fresh mint always adds something, you know? It’s refreshing in summer, but I love it in the winter because it smells so darn fresh. It’s like a scrumptious little escape from the cold…if you live where it gets cold, that is.
It’s been a hectic week, so I’m looking forward to powering through an awesome Friday and then being home for a full weekend! It’s a miracle! Although, I can’t complain. We were in Chicago two weeks ago (which was amazing) and then Kennebunkport, ME (which was the most relaxing getaway ever). Never heard of Kennebunkport? You’re not alone.
