A few weeks ago, my dear (unreasonably talented) friend, Kenzie, published her second cookbook. SECOND. Of course, I couldn’t say no, so I grabbed my copy and have been spiralizing since!
I’ve tried a few of her recipes and have to say, this girl knows how to cook. And spiralize too, as her book’s title suggests.
Actually, I didn’t even own a spiralizer until Kenzie’s book came out – but I quickly fixed that and picked one up at Williams-Sonoma .
The first recipe we made (well, of course it was delicious), but it was so easy! I broke out my very first spiralizer and we whipped up dinner in a jiffy.
We tried out Kenzie’s Tomato & Avocado Pesto Pasta and boy, was T. impressed. Although, I might have even been more impressed that we enjoyed eating (so many) veggies so much!
The next meal we made was her Kale Harvest Vegetable Salad and yet again, we loved it. Lunch took about 30 minutes and it was filling, delicious, and so easy!
I’m using a ton of exclamation points in this post, sorry. I’m just so darn excited for Kenzie and for how well we’re going to be eating now.
One more round of thanks to Kenzie’s positively scrumptious book, and many many snaps and congratulations to her (or you, if you’re reading Kenzie!). Can’t wait to make more of your recipes!

i was LITERALLY just telling my coworkers how bad i want a spiralizer! this book seems really cool, so i’ll definitely be checking it out once i get my hands on one!
You should definitely grab one! Ours isn’t fancy at all, but it does the trick for sure.

She did such a phenomenal job with the book! Not that I’m surprised, she’s so talented. You should definitely pick one up; we grabbed a handheld one for $20!

Wait, this book looks amazing! I was just spiraling zucchini yesterday but I am so simple about how I prepare it, just often with store bought pesto or marinara sauce. Yesterday while I was making it for lunch I was thinking I needed to find some more unique recipes. Can’t wait to check out the book.
