Strawberry Kiwi Champagne Cocktail

When my dear friend Kelly and I were whipping up these strawberry kiwi champagne cocktails, we realized that they looked gross. Like really gross.

I’m not even kidding. I think it’s because we put way too much strawberry nectar in the glasses with only a small amount of champagne.

Well, isn’t that always the problem? Not enough champagne?  I think so.

We picked up the strawberry nectar thinking it would be this beautiful pink or red. Wrong. It was not! It looked like some weird brownish, reddish concoction that was not created for consuming.

I’m doing a really great job of selling you on these strawberry kiwi champagne cocktails aren’t I? Luckily, they’re pretty darn tasty. Super strong, but tasty.

And I feel like that’s just what I needed this week. It sure has been one heck of a week, I tell you. Was your week just as crazy? I felt like I was running a marathon…though I’ve never run a marathon so I don’t exactly know what that feels like, but I imagine you feel exhausted, tired, and like you’re never going to get to the finish line.

I was away all last weekend at Lady Project Summit (which was amazing, might I add), but by the time we made it back home it was Sunday evening and it was time to prep lunch for Monday and start all over again.

Whew, it sure can be tough jumping back in without feeling like you’ve had a break. Know what I mean? I’m sure you do.

Luckily, it’s Friday and that means cocktail time. I’m feeling spring-y even though we’re expecting snow on Sunday. No, I’m not kidding. Snow. On. Sunday. I’m getting too confused with all the weather inconsistency!
