Guys (gals, too), I thought the Grapefruit Bourbon Cocktail was my favorite beverage yet. Alas, I was wrong. Meet the Sweet Beet Margarita. At this point in time, you might be asking yourself (or me…from the comfort of your own home, office, etc.) “what the heck is up with beets in this cocktail?”
What is up, exactly, is a delicious twist on a classic cocktail – the margarita. This one’s got a punch, for sure. I used mezcal because let’s face it, mezcal is fantastic and quickly becoming one of my favorite things ever.
Only a slight exaggeration. So, it’s finally Friday and you deserve a major treat. I’m in for a way-too-busy weekend, but it’ll be a little better with this smoky and sweet marg on hand. And by the way, the beet syrup doesn’t taste….”beety.” It’s more like a tastier/flavorful simple syrup.
Oh, and it makes your drink bright pink. Does it get better than that? I don’t think so. Just look at that color! It’s marvelous, isn’t it?

Oh they’re so good! It took me a while to get into them, but now I love them. They’re great roasted with a balsamic reduction, too 🙂
