This week has been a tough one. One of those when-is-it-going-to-end-because-I-can’t-take-it-anymore kind of weeks. I like keeping busy, but this one was simply too much. It also doesn’t help that I got my third flat tire in six days! Can you even believe it? I can’t. It’s such a sad moment – you try to bike, and then you get nowhere. To make the best of a tough week, I wanted to end it on a sweet note. Well, with a Sweet Coconut Caipirinha to be exact.
The Caipirinha is a classic Brasilian drink. It’s one of my all-time favorites because it’s strong, and totally delicious. I’ve seen lots of restaurants here in Boston stirring up Caipirinhas, but none of them taste as traditional as the ones back in Brasil. You just can’t beat it! Maybe it’s the tropical air or the al fresco dining (basically at every restaurant), but the one’s here just don’t taste like home.
While the traditional Caipirinha boasts a strong flavor thanks to the cachaça, it also has tart limes and sugar. That’s it! Now you can see why it’s so darn strong…and not just in flavor, right? So, while we were celebrating the Olympics opening ceremonies at home, we decided to mix up a Sweet Coconut Caipirinha recipe for our friends. The sweet coconut cuts the harsh (but tasty!) cachaça and adds a little somethin’ somethin’.

OMG! Addicted to the Olympics! I love watching gymnastics (go Team USA!) and swimming (I’ve got a major crush on Michael Phelps) and diving. I love caipirinhas…..we fell in love with them when we went to Portugal….haven’t had a good one since. Want to give this one a try! xx
