A Watermelon Avocado Salad recipe – a perfect fit for an easy summer lunch.
I didn’t ditch you! I promise.
And, to hopefully – at least somewhat – make up for being so MIA, I made you this Watermelon Avocado Salad.
It screams summer. Although, I eat avo all year-round. Watermelon on the other hand, isn’t typically what I crave in the winter.
Usually it’s mac and cheese.
Who’s with me? Can I get a show of hands?
I suppose I shouldn’t be eating mac and cheese for every meal, but I also don’t really love salad.
Unless it’s a really souped up salad…you know the kinds I’m talking about. The ones with so much flavor you can barely believe it’s a salad. Or, basically, anything that Tieghan from Half-Baked Harvest whips ups.
Anyways. Back to the Watermelon Avocado Salad. It’s light, refreshing, and overall fairly healthy for you. I also like that you can prep it in advance. So, you could cut up the watermelon, cook the farro, make the dressing, etc. all a day or two in advance. Although, I’d suggest cutting up the avo fresh, for obvious reasons.
If you don’t already know, easy prep meals are my absolute favorite because it makes weekday lunches a breeze. Even though I work from home, I’m still really bad at taking a break for a proper lunch. So when it’s already prepped and sitting in the fridge, I remember to eat a decent meal. Win!
1/4 fresh watermelon, cubed
1 avocado, sliced or cubed (or both!)
1/4 cup pickled red onions
1/2 cup cooked farro, cooled
4 sprigs of cilantro, chopped
4 sprigs of mint, chopped
2 tablespoons queso fresco
1 tablespoon oil
Juice from 1/2 lemon
Pinch of salt
1 teaspoon honey
1 teaspoon apple cider vinegar
1 pinch Tajin
1. Make your dressing. Whisk oil, lemon, salt, honey, and ACV until combined. Set aside.
2. Plate your salad, stating with the farro. Top with watermelon, avo, cilantro, mint, and queso fresco.
3. Drizzle your dressing, top off with Tajin, and enjoy!
