A weekday breakfast spread that’s sure to please.

Imagine it now—a weekday breakfast spread as dreamy as this.
Just because weekdays are typically more hectic than weekend mornings (at least for most), that doesn’t mean you have to give up and snack on a less than ideal breakfast.
Not at all. In fact, you deserve a happier breakfast each and every day. Do I sound like an infomercial yet?

Like, why wouldn’t you want something delicious to start your day with?
Take this spread for example. The only thing I actually had to prep was the toast.
TOAST, y’all! It’s easy as pie. Here’s how that went:
I toasted the toast. Then I spread ricotta and jam (my favorite jam to be specific – raspberry amaretto jam) on top. I drizzled it with olive oil. And finally, I seasoned it a bit with salt and pepper.
The rest of the breakfast spread was good to go. Well, if you don’t count washing fruit as prep.
Which really, you shouldn’t because you should be doing that anyway. Just your friendly breakfast PSA.

It’s kind of funny that I love oats (all kinds!) as an adult because when I was younger, I’m pretty sure I thought that I had to eat them because I was in trouble. I thought they were tasteless and with a pretty odd consistency to boot.
Yet, here I am. Making all kinds of oats to enjoy with breakfast and as snacks throughout the day because y’all know how much I enjoy healthy snacking.

So basically, you can still enjoy them for breakfast without having to anticipate what you’d like for breakfast a day in advance. Plus, these cups provide a whole serving of fruit*.
