On Fridays, we enjoy cocktails. And this Friday, I am so ready to get home and sip on this Apricot Pimm’s Fizz. Never heard of Pimm’s? No problem. I had heard of it, but never actually used it at home to stir up a cocktail until now. So, we’re both Pimm’s newbies!
It was a good life decision. Well, also because we ordered it from Drizly and that’s always a good life decision. If you want to learn more about Pimm’s, check out their website. This might sound strange, but their site is worth a visit. It’s fantastic – so fun and colorful! I actually wish my blog looked more like the Pimm’s site! I suppose that’s a project for another day 😉
When I was dreaming up my first Pimm’s cocktail, I really had no idea where to start. So, I visited the Pimm’s site and spotted their blackberry & elderflower (!!) edition. Too bad for me, I already had the original, but now I know what my next purchase will be.
It was back to the drawing board for me. I knew I wanted something fruity, and then it hit me – I wanted to pair it with peach. I hit up the grocery store and found that I happened to go on the one day they didn’t have peach nectar (my favorite of the nectars), but I did see they had apricot, so I figured I’d give it a try.
I threw in some ginger beer and crushed ice and the Apricot Pimm’s Fizz was born! I have to say I quite enjoyed it! We made these on an overcast day and it was the perfect little pick-me-up.
We did end up spilling both of our drinks all over our bar cart and floor. Luckily, that’s what towels are for, right?
What do you have in store for this weekend? It looks like it’s going to be a rainy/snowy (yeah, I’m confused too) one here in Boston, so we’re hoping to finally have some time to relax. That’s the hope, at least! Oh – and catching up on all of my favorite blogs, of course. What are some of your must-reads? I’m on the search for some new ones to enjoy!

Yum! These are always my favorite.
So what do you know about Pimms? It’s really popular in the UK, but I’m never really been into it. Hollie loves it though. I think people drink it at the tennis. Is it new to the US? Me too, a blog catch up is happening as we speak.
I basically know nothing about it – except for what I found on their way too cute site. Which I realize isn’t too helpful, but I’m hoping to learn more! I definitely want to get some of their other flavors. I don’t think it’s necessarily new to the US, more so not as well known or popular here.

I can almost taste the sweetness in my mouth! Love the color + ingredients this must be really delicious. I’m always too bored to make my own cocktails but you definitely make it look easy! (+that gold giraffe? pony? is adorable!)
