My husband and I decided that if we’re to move anywhere else (within the States), it MUST be near a Trader Joe’s.
There’s just something so great about Trader Joe’s and the people who choose to shop there.
It’s like it has is own community. Who knew it could be such a treat to go to the grocery store every week?
Enough of my love for Trader Joe’s (for now). Let’s get to this lunch which has quickly become a weekday staple.
This easy falafel salad bowl is kind of like a “cheat meal”, not because it’s not healthy, but because I’m making it from pre-made ingredients from Trader Joe’s.
But truthfully, who really has time every weekday to make an extravagant lunch?
Sure, it may be easier if you meal prep, but that’s not everyone’s jam. And, truth be told, I haven’t been to great at meal prepping as of late.
So, I default to this easy falafel salad bowl courtesy of my first love, Trader Joe’s.
